
Jean and Chantal met at La Grillade in Paris, France. La Grillade was the restaurant Chantal owned and where Jean was a frequent customer. Jean was soon invited to cook for the restaurant and within six months Jean and Chantal were married. Shortly thereafter, the couple embarked on
their journey to the United States. They relocated to Los Angeles where Chantal had family. The
move proved to be a positive one as Jean found work with several accomplished chefs at the the
well known restaurant Mecca.
Jean started cooking when he was fourteen and completed three years formal schooling in France, which included butchering and cooking techniques. In perhaps his most significant position, Jean worked nearly four years as Yves Menes right hand man at The Jonathan Club in Los Angeles. There he learned many of Menes’ techniques and philosophies in the preparation of a variety of cuisine, not to mention kitchen management. Yves Menes won the coveted “Meilleur Ouvrier de France” award in 1982. Jean and Yves competed in the Food Olympics in Frankfurt Germany where together they won a bronze medal for cooking.
Chantal’s grandmother was one of the first female chefs in France to receive a coveted Cordon Bleu award for culinary excellence. Her family background in the business provides her great strength in restaurant management.
In 1992, Jean and Chantal saw an ad in a French newspaper in Los Angeles for The Savoy in
Berthoud. They visited Colorado for the first time in the summer of 1992 and fell in love with the
mountains and the clean living in Colorado. They bought The Savoy that autumn and made a very
successful business out of it.
In 2005, Chantal and Jean sold the Savoy in Berthoud in order to take time off to travel and look for another bigger location for the restaurant in Colorado. In August 2007, they found this wonderful building where you are now reading their story and it fit perfectly with their new venture, a Parisian Brasserie (Brasserie used to be in Europe a brewery where people came to eat, so it
became the name of upscale bistros.) We hope you enjoy The Savoy Brasserie as much as you did The Savoy in Berthoud, if this is your first time we hope you enjoy your meal and thank you for
